  • Anaerobic Natural: The high sugar content from the 90h Anaerobic fermentation makes this bean sensitive to heat. Charge gently to avoid scorching the sugars early on.
  • Development: Keep the ROR steady through Maillard to fully develop the heavy Chocolate body without sacrificing the Raisin acidity.
  • Result: This coffee shines as a funky filter option or a punchy espresso — but monitor First Crack carefully, as anaerobic naturals tend to crack softer and later than washed coffees.

About this Coffee

Sourced from El Caney Estate, Sarah's Choice is a pristine example of controlled anaerobic fermentation. Producer Natalia Zuluaga employed a 90-hour Anaerobic process to intensify the fruit characteristics inherent to the Caturra variety.

The result is a coffee that drinks like a dessert: driven by the dried fruits (Prune, Raisin) but structurally sound with a classic chocolate backbone. It represents the innovative spirit of the new generation at El Caney.
