A livelier take on the house style, juicy red currant acidity over toasted almond and milk chocolate, with a panela sweetness and a bright orange-zest lift on the finish.
🔥 Roaster's Insight
  • Roast approach: A clean washed Caturra with the slightly brighter acidity typical of a mitaca lot, a standard light-medium washed profile works well, with a touch less development than you'd use on the main-harvest Hannah's Choice to preserve that extra lift.
  • Watch for: As with any mitaca lot, expect a bit more day-to-day variation than the main harvest, a quick cup on arrival helps confirm the profile before committing to a fixed roast.

About this Coffee

Hannah's Choice, Mitaca is the fly-crop harvest of our relationship-coffee lot from Gustavo Zuluaga at El Caney Estate, the same washed Caturra, picked at a different point in the year.

The cherries get a slow 24-hour pre-ferment before pulping, then rest another 48 hours in the tank to fully develop: a patient, two-stage fermentation that gives this mitaca lot a touch more depth and brightness than a straight wash would.
