About this Coffee
Mara des Bois comes from Julio Bastidas's Finca San Isidro Labrador in La Unión, Nariño, the same farm behind our washed La Union lot, this time a honey-processed Castillo.
Cherries are pulped and left to dry with their mucilage intact through a 30-hour fermentation, building the body and red-fruit sweetness that sets this lot apart from its washed sibling.
The lot is named after Mara des Bois, a French strawberry variety prized for its intensely aromatic, wild-strawberry flavor: the closest fruit analog to the strawberry note leading the cup.
Mara des Bois is one of the microlots featured in our guide on how to source Colombian microlots in Europe, with notes on harvest windows, reserving and samples.
