Sensory Experience
A richer take on the same Natural Tabi. Ripe pineapple and peach sit on a heavier maple-syrup body, with jasmine in the aroma and a brown-sugar weight that carries through the finish. Same lot, more presence in the cup.
🔥 Roaster's Insight
- Roast approach: Whole-cherry natural with extended fermentation. Give it a touch more development than a clean washed lot so the fruit sugars resolve instead of staying sharp. A medium filter profile holds the tropical notes; pushed a step further it works as an espresso component.
- Watch for: This harvest cups denser than the previous lot (87.75). Don't under-develop it chasing brightness — the fruit is already there, the extra point is in body and sweetness.
About this Coffee
Elephant Heart is the new harvest of our Natural Tabi microlot from Gustavo Zuluaga at El Caney Estate. Same variety, same farm, same whole-cherry natural with extended fermentation and mechanical drying. This crop cups a point higher, at 88, and drinks richer: pineapple and peach still lead, but the syrup is stickier and the finish longer.
Tabi — a Typica, Bourbon and Timor hybrid — gives the lot its structure. The natural process does the rest. Cherries are dried in the fruit, so the sugars stay in the bean instead of being washed out.
