About this Coffee
Mara des Bois comes from Julio Bastidas's Finca San Isidro Labrador in La Unión, Nariño — the same farm behind our washed La Union lot, this time a honey-processed Castillo.
Cherries are pulped and left to dry with their mucilage intact through a 30-hour fermentation, building the body and red-fruit sweetness that sets this lot apart from its washed sibling.
The lot is named after Mara des Bois, a French strawberry variety prized for its intensely aromatic, wild-strawberry flavor — the closest fruit analog to the strawberry note leading the cup.
