Ambrosia — Washed Pink Bourbon

Microlot — Finca El Caney

SCA Score: 87.0
Sensory Experience
Cranberry Orange & Lemon Vanilla Almond
"Elegance in a cup. A bright, floral opening of cranberry and orange blossom evolves into a sweet, structured body of vanilla and fresh almond."
🔥 Roaster's Insight
  • Pink Bourbon: This variety is prized for its high glucose content and complex acidity. Treat it gently in the drum; high charge temps can scorch the delicate floral notes.
  • Processing Impact: The 48h mucilage contact adds a creamy texture without compromising the washed clarity. Aim for a light-to-medium roast to highlight the Cranberry notes.
  • Result: An exceptional filter coffee that showcases the best of modern Colombian genetics.

About this Coffee

Ambrosia is named after the 'food of the gods', and for good reason. Sourced from Gustavo Zuluaga at El Caney Estate, this Pink Bourbon lot showcases the genetic distinctiveness of this rare variety.

Gustavo uses a precise washed protocol (24h cherry ferment followed by 48h in mucilage) to lock in the sweetness while preserving the vibrant citric acidity. It represents the pinnacle of clean, complex Colombian coffee.
