Elephant Heart is named after the Elephant Heart Plum, a distinct stone fruit known for its mottled skin and deep, ruby-red flesh. We chose this name because this Natural Tabi shares that exact profile: luscious, complex, and bursting with red fruit intensity.
Sourced from Gustavo Zuluaga at El Caney Estate, this Tabi variety (a cross between Typica, Bourbon, and Timor) combines the cup quality of ancient heirlooms with the resilience needed for organic farming. Processed as a Natural, it develops a deep, tropical sweetness reminiscent of ripe pineapple and the fruit it is named after.
