Patricia Gomez — Buesaco, Nariño

SCA Score: 85.5
Sensory Experience
Sweet Orange Caramel Brown Sugar Round Body
"A comforting, highly drinkable Honey process. Dominated by deep caramelized sugars and a gentle orange acidity. A sustainable daily coffee with excellent body."
🔥 Roaster's Insight
  • Process Impact: The Honey process (drying with mucilage) adds a layer of browning sugars. Watch out for a slightly faster coloring during the Maillard phase.
  • Blend Uniformity: This is a field blend of Castillo, Colombia & Caturra. Aim for a slightly longer soak/drying phase to equalize the bean moisture before ramping up heat.
  • Sweet Spot: Drop just after first crack settles to maximize the brown sugar sweetness.

About this Coffee

Patricia Gomez (43) is a proud example of female leadership in Buesaco, Nariño. For 20 years, she has managed Finca El Condado, a 1-hectare farm she inherited from her aunt.

Patricia lives on the farm with a large extended family. Twelve years ago, she made the pivot to Specialty Coffee, joining the "Cultivando Futuro" association. Through their training, she found her signature method: Honey Processing.

"I prefer drying with mucilage not just for the taste," Patricia explains, "but because it drastically reduces water usage."

By skipping the washing channel, she protects the micro-water basins that supply her neighbors in the village of Guayacanes. Despite the small size of her farm, she manages three distinct lots (Castillo, Caturra, Colombia) in rotation to ensure a steady, high-quality harvest.
